Serves 4


INGREDIENTS :

• 550g of beef round interior

• 2 teaspoons of black garlic vinegar

• 2 teaspoons of Dijon mustard

• 1 dash of lemon juice, to taste

• 2 egg yolks

• 1 tablespoon and 1 teaspoon of chopped capers

• 4 teaspoons of olive oil

• A few sprigs of chopped chives

• Chili crisp, to taste

Black garlic salt (or other salt)

• Freshly ground pepper


To serve:

• 4 tablespoons of black garlic purée

• Marinated mustard seeds (optional)

• Fresh mustard sprouts, or other sprouts


PREPARATION :

1. Cut the meat into small cubes. Set aside in the refrigerator.

2. In a measuring cup or other container, combine the vinegar, mustard, lemon juice, egg yolks, and capers. Pour in the oil, mix, and set aside in the refrigerator.

3. A few minutes before serving, combine the vinaigrette, chives, beef, and chili crisp. Season with salt and pepper. Adjust seasonings as needed.

4. To serve, place about 1 tablespoon of black garlic purée on each plate.

5. Place the tartare in a mold and turn out onto the dollop of purée.

6. Add the marinated mustard seeds and a few fresh sprouts. Add a pinch of black garlic salt.

7. Serve with bread croutons and plain potato chips.

8. Drizzle a little olive oil over the tartare.

INGREDIENTS :

FOR THE ASIAN EGGS :

• 3 eggs

• 2 tablespoons of black garlic sauce (or soy sauce)

• ½ teaspoon of black garlic purée

• 1 tablespoon of sesame oil

• 1 tablespoon of maple syrup

• 1 tablespoon of mirin

• ½ teaspoon of chili crisp

• Ginger zest, to taste

• Salt


FOR THE BROTH :

• 2 cloves garlic

• 1 tablespoon of sesame oil

• 3 cups of chicken broth

• 1 tablespoon of black garlic sauce (or soy sauce)

• 3 kaffir lime leaves

• 1 piece of lemongrass

• Remaining egg marinade

• 1 teaspoon of minced ginger

• Salt

• Freshly ground pepper


GARNISH :

• Meat from one sausage

• A few slices of pan-fried shiitake mushrooms

• ¼ cup edamame

• 1 green onion, sliced into rings

• 3 bok choy

• 1 tablespoon butter

• ½ cup carrots, thinly julienned

• Fresh chopped cilantro

• Red cabbage sprouts (optional)

• Chili crisp or sriracha sauce

• Black garlic salt

• About 120 g instant ramen noodles


PREPARATION :

1. Bring the water for the eggs to a boil in a pot. Cook the eggs for 6 minutes for soft-boiled eggs. Meanwhile, prepare the marinade. When the eggs are ready, plunge them into cold water and remove their shells. Add them to the marinade. Leave them on the counter while preparing the recipe, stirring occasionally. Or, for maximum flavor, prepare them the day before and store them in the refrigerator.

2. Make the broth and let it macerate while you prepare the rest of the ingredients.

3. Cook the sausage meat and add the shiitake mushrooms while cooking.

4. Cut the bok choy in half lengthwise. Sauté them in butter until browned. Season with salt.

5. Cook the noodles in the broth according to the package directions.

6. Serve the bowls by combining each prepared ingredient.

7. Drizzle with chili crisp or sriracha sauce when serving (optional).

8. Add a pinch of black garlic salt.

INGREDIENTS :

• 4-6 Russet potatoes, cut into sticks

• Your family recipe for poutine sauce or a packet of your favorite brand

• 2 tablespoons of black garlic purée

• 1 cup (250 mL) of 15% cream

• 675 g of fresh cheese curds


BINETTE-LESSARD'S SAUCE RECIPE :

• 1 cup of homemade beef broth

• 1 cup of homemade chicken broth

• 1/4 cup of flour

• 1/4 cup of butter

• 1 clove garlic, minced

• 3 tablespoons of cornstarch

• 3 tablespoons of water

• 2 tablespoons of black garlic purée

• 1 cup (250 mL) of 15% cream


PREPARATION :

1. Using your favorite poutine sauce, add 2 tablespoons of black garlic purée to your sauce during the thickening stage. Stir.

2. Add 1 cup of 15% cream. Stir.

3. Continue cooking for 3 minutes over medium heat.

4. Remove from heat and pour your sauce over your fries and fresh cheese!

5. Lightly salt with our black garlic salt.

Serves 6 to 8


INGREDIENTS :

Focaccia dough

• 1 teaspoon of instant yeast

• 1 teaspoon of maple syrup

• 1 cup of lukewarm water

• 2 ½ cups of unbleached white flour

• 1 teaspoon of salt

• ½ teaspoon of black garlic salt

• 2 tablespoons of extra virgin olive oil


Topping

• 1 tablespoon of black garlic purée

• 1 tablespoon of olive oil

• 2 ripe Bosc pears, sliced (about ½ cm thick)

• 1 tbsp of butter

• 1 tbsp of maple syrup

• ¼ cup of grated Parmesan cheese

• A few sprigs of fresh rosemary

• Black garlic salt

• Freshly ground black pepper


When serving

Mix 1 tbsp black garlic purée with 2 tbsp olive oil to dip the pieces in while eating.


PREPARATION :

Dough

1. First, in a small bowl, combine the yeast, maple syrup, and water. Let stand for about 5-10 minutes or until the mixture becomes foamy.


2. Next, in another bowl, combine the flour and salt. Make a well in the dry mixture and stir in the liquid mixture. In short, mix until the dough begins to form.


3. In another large clean bowl greased with half the oil, transfer the dough and turn it over to coat it well. Cover with a large piece of plastic wrap (it will be reused later on the rectangular pan) and let rest for about 2 hours at room temperature or in the oven with the light on to help the dough rise.


4. Once the dough has doubled in size, spread it out in a rectangular pan lined with oiled parchment paper.


5. Set the plastic wrap aside. Using your hands, fold the dough over itself in the bowl about 3-5 times to deflate it and give it a round shape.


6. Finally, stretch the dough to cover the entire surface of the pan. Then let it rest for 1 hour, replacing the plastic wrap (still at room temperature or in the oven with the light on).

Preheat the oven to 375°F.


Final preparation

1. First, melt the butter in a skillet and add the pears and maple syrup. Cook over medium-low heat for about 3-5 minutes, turning the pieces halfway through cooking or until caramelized. Set aside.


2. Next, prick the dough all over with your fingers. Add black garlic salt to taste.


3. Third, mix the black garlic purée and olive oil and brush onto the dough.


4. Next, arrange the pear slices, grated Parmesan, and rosemary sprigs on the dough. Season with pepper.



5. Finally, bake for about 25-30 minutes, or until the focaccia is golden brown. Remove from the oven and let cool slightly.

When ready to serve, add a few shavings of Parmesan cheese and sprigs of fresh rosemary, then cut the focaccia into equal pieces.



Serve as an accompaniment to a salad or soup, or as an appetizer.

INGREDIENTS :

• Butter base

• 2 cloves garlic, finely chopped

• 2 tablespoons of butter

• 1 tablespoon of olive oil

• ¼ cup of 15% cream

• 3 sprigs fresh thyme

• Salted herbs, to taste (about ½ teaspoon to 1 teaspoon)

• Freshly ground pepper


Tart

• 1 homemade or store-bought shortcrust pastry

• ½ cup of warm shredded duck confit

• 1/3 cup grated Parmesan cheese

• Radish sprouts or other fresh sprouts

• Fresh thyme

• Black garlic jelly

• Freshly ground pepper


PREPARATION :

Pastry

1. In a skillet, heat the butter, olive oil, and garlic over low heat for about 2-3 minutes. Add the fresh thyme, salted herbs, and cream. Reduce for about two minutes or until the mixture thickens. Season with pepper.


2. Place the dough on a baking sheet, prick it with a fork in a few places and brush it with the butter mixture. Spread half of the grated cheese on top. Add the reheated duck. Fold the edges of the dough over.


3. Bake for about 13 to 16 minutes, until the tart is golden brown, and increase the heat to broil.


4. When serving, add the rest of the Parmesan cheese, fresh thyme, and sprouts. Drizzle with olive oil (optional). 




Before serving, add a few spoonfuls of black garlic jelly, to taste, without hesitation. Season with pepper.

• 1/2 teaspoon of La terre du 9 black garlic purée

• 2 tablespoons of maple syrup

For 25-30 truffles


INGREDIENTS :

• Chocolate ganache

• 1 cup of dark chocolate chips (70%)

• 200 ml of 35% cream

• 2 tablespoons of honey

• ½ teaspoon of sweet clover essence (or vanilla essence)

• ¼ cup of melted semi-salted butter

• 1 ½ tablespoons of black garlic purée


Icing

For coating the truffles:

• 1 cup of dark chocolate chips (70%)

• Bitter cocoa powder


PREPARATION :

Ganache

1. Melt the chocolate in a double boiler. When the chocolate begins to melt, stir regularly to achieve a smooth texture. Add the black garlic purée and stir until smooth.

2. In a second saucepan, heat the cream with the honey and sweet clover essence and bring to a boil while stirring.


3. To prevent the chocolate from burning, transfer the saucepan to a bowl filled with ice.


4. Gradually pour the cream into the melted chocolate, stirring vigorously to incorporate it well and form a smooth ganache.


5. When the ganache has cooled, add the melted butter and stir until smooth.


Refrigerate for 3 hours.

Once the ganache is firm, shape it into chocolate balls. Set aside.


Coating

1. Remove the cocoa with a spoon dipped into the container.


2. Melt the chocolate in a double boiler and stir.


3. Once the chocolate has melted, place the first ball in the chocolate and, using two spoons, coat it well with chocolate and drain. Transfer back to the tray and sprinkle with cocoa powder.




Repeat this step for each of the truffles.


Refrigerate.

INGREDIENTS :

Cake

• 2 ¼ cups of unbleached all-purpose flour

• ¾ cup of cocoa powder

• 1 teaspoon of baking powder

• 2 teaspoons of baking soda

• ¼ teaspoon of salt

• ¾ cup of butter, softened

• 1 cup of sugar

• 2 eggs, at room temperature

• ½ cup of milk

• Tablespoon of black garlic purée


La terre du 9 products

• Black garlic purée

• Black garlic salt

• Black garlic simple syrup

• 2 cups of water

• 2 cups of white sugar

• 1 tablespoon of black garlic purée

• 1 cup of ground cherries


Black garlic whipped cream

• 1 cup of 35% whipping cream

• ½ teaspoon of black garlic purée

• 2 tablespoons of maple syrup

• Black garlic salt chocolate

• 1 bar (100 g) of dark chocolate

• 1 pinch of black garlic salt


PREPARATION :

Cake

1. Preheat the oven to 350°F (175°C). Grease two 8-inch (20 cm) round cake pans with straight sides.

2. Combine the flour, cocoa powder, baking powder, baking soda, and salt in a bowl. Set aside.

3. In another bowl, beat the butter and sugar until creamy. Add the eggs one at a time.

4. Sift the dry ingredients into the bowl containing the butter and sugar mixture, then gradually fold them in with a spatula or whisk, alternating with the milk.

5. Once the cake batter is smooth and homogeneous, add the black garlic purée and mix well. Divide the batter between the cake pans.

6. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Let cool on a wire rack and remove from the pans.


Simple syrup

7. Combine the water and white sugar, bring to a boil in a saucepan, and boil for a few minutes until the sugar is dissolved.

8. Turn off the heat and add the black garlic purée, stirring until dissolved. Let steep for at least 60 minutes in the refrigerator.

9. Once the syrup has cooled, strain it through a small sieve or coffee filter to remove any sediment.

10. Heat again, add the ground cherries, and heat for 10 minutes without boiling. Allow to cool before serving on the cake.

Black garlic whipped cream

11. Whip the cream with an electric mixer until soft peaks begin to form.

12. Add the black garlic purée and maple syrup, then continue beating for another 30 seconds to 1 minute until golden in color.

Chocolate pieces

13. Melt the chocolate and drizzle onto parchment paper. Sprinkle with black garlic salt and let cool.


Assembly

14. Have fun assembling the cake by alternating layers of cake, whipped cream, cherries, and black garlic salt-coated dark chocolate pieces, according to your creativity.


TIP: With its soft texture, black garlic flavors the whipped cream without overpowering it.

• 1/4 cup of lemon juice

• 8 dashes of hot sauce (Tabasco style), to taste

• 4 1/3 cups tomato juice or clam juice (Clamato)
