Located near Fontevieille in Provence, the Château d'Estoublon estate gives onto the south side of the Alpilles mountain range. Amongst the first olive oil producers of the region, Château d'Estoublon was established in 1731. Though their entire production, from growing to harvesting, is done according to organic certification standards, Château d'Estoublon chooses to only have a select few of their products officially certified. The use of talc, also known as baby powder, allows them control over infestations and harsh climate conditions while remaining respectful of the environment and ecosystem around them. Among the varieties harvested is the Salonenque, from which is made a delicious monovarietal olive oil with a light fruity taste. Aromas of green apple and fresh herbs make this oil wonderful over seafood, endives and vanilla ice cream. Fresh as can be with a silky smooth finish.
