From a meticulous choice of 100% Italian cereals, Marella pasta was born in the Apulian town of Gioia del Colle. Totally artisanal production and a long, slow drying process at 37/38 degrees for up to 72 hours, make our pasta a special, high-quality product. Thanks to this particular process, Marella pasta develops greater porosity than traditional pasta, allowing greater absorption of condiments and high digestibility. Finally, the long drying process ensures that the proteins and amino acids in the pasta remain unchanged, including tryptophan, also known as the happiness hormone.
