Ingredients

• 3/4 cup all-purpose flour
• 1 tsp baking powder
• 1 egg
• 1/2 cup sugar
• Zest of one lemon
• 1/4 cup lemon-infused olive oil
• 1/4 cup milk
• 2 tbsp fig balsamic vinegar
• 2 cups chopped fruit (fresh raspberries and figs suggested)
• Powdered sugar


Preparation

1. Preheat the oven to 350°F (180°C). Butter an 8-inch springform pan.
2. In a bowl, whisk the egg with the sugar and lemon zest until the mixture turns pale and frothy.
3. Add the olive oil, milk, and balsamic vinegar. Mix well.
4. In another bowl, combine the flour and baking powder.
5. Incorporate the dry ingredients into the liquid mixture, gently folding the batter.
6. Add the fruit.
7. Pour the batter into the pan.
8. Bake in the center of the oven for about 35 minutes, or until a toothpick comes out clean.
9. Let cool slightly, then dust with powdered sugar before serving.
