Bluegrass Bloody Cesar

Ingredients & preparation

•     Fumix Caesar spice blend
•     Lemon juice
•     Ice cube
Bourbon (1.5 oz)
•    Tabasco (¼ tsp.)

Worcestershire sauce (1 tsp.)
Pickle juice (1 tsp.)
•     Walter Craft Ceasar Mix (4 oz)
      (ready-to-drink cocktail with vodka & spicy tomato juice)
•     Slice of bacon (previously cooked) (1)
•     Celery stalk (1)
•     Pickles and olives to taste

Step 1: Prepare garnish skewer with pickles and olives, set aside.

Step 2: Place Fumix Caesar spices on a plate.

Step 3: Moisten the rim of the cocktail glass with a lemon wedge and garnish with Caesar spices.

Step 4: In your cocktail glass or cocktail shaker, combine the ice, Bourbon, Tabasco, Worcestershire sauce, pickled gherkin juice and ready-to-drink vodka-tomato juice cocktail.

Garnish with cocktail bacon sclice, skewer and celery stalk. Enjoy!

Dry Rub Fumix

Ingredients & preparation

•     One part Fumix Caesar spices -         

•     One partFumix smoked paprika

•     One part Fumix smoked sea salt

•     One part brown sugar

Use the same quantity for each spice

Step 1 : Mix the spices together. Rub the spice mixture over the piece of meat, drizzle with olive oil or add melted butter to the mixture before spreading on the piece of meat (or tofu (if it's tofu, it must be pre-dried and squared on the surface to optimize the flavours)).
Step 2 : Marinate the meat or tofu in the fridge for 15 minutes to 24 hours. Cook according to instructions with the protein of your choice.

Serve with steamed vegetables or jacket potatoes.

Smoky Devil Eggs

Ingredients & preparation

  • Hard-boiled eggs, cooled & shelled (12)
  • Mayonnaise (4 tbsp.) 
  • Chopped chives (3 tsp.) 
  • Dijon mustard (1 tbsp.)
  • Apple cider vinegar (1 tbsp.)
  • Slices bacon, crumbled (2)
  • Hot sauce (optional)
  • Salt & pepper 

Step 1: Cut the hard-boiled eggs in half. Core yolks and transfer to a bowl.

Step 2: Mix egg yolks, mayonnaise, chives, Dijon mustard, apple cider vinegar, hot sauce (optional). Salt & pepper to taste.

Step 3: Using a pastry bag, fill egg whites with egg yolk filling, garnish with smoked paprika, crumbled bacon & serve.


Gravlax Fumix

Ingredients & preparation

•     1 salmon fillet, (about 1 lb)
•     Fumix smoked sea salt (80 g)
•     Maple syrup (60 ml)
•     Coarsely chopped fresh dill (2 tbsp.)
•     Ground pepper (1 tbsp.)
Panacea Gin La Manufacture Distillery (30 ml)

Step 1: In a small bowl, combine the gin and maple syrup, set aside.
Step 2: In another bowl, combine Fumix smoked sea salt, ground pepper and chopped fresh dill.
Step 3: Put salmon fillet (flesh side up) in a glass dish large enough to lay so that it lies flat.

Step 4: Brush maple syrup & gin mixture over salmon. Sprinkle with a mixture of sea salt, pepper and dill over the fish. Cover with plastic wrap.
Refrigerate for 36 hours.

Step 5: Rinse salmon fillet under cold running water. Pat dry with paper towel. Return to clean dish. Garnish with fresh dill.

Step 6: Serve, using a sharp knife, slice salmon fillet thinly, starting salmon fillet, starting with the thick end. Discard skin.
Perfect for the brunch with bagel and cream cheese or in apero platter & appetizer with crackers & sour cream.
