One of the pillars of À l'Olivier's brand, this preparation based on vinegar and mango pulp offers a suave sweetness on the attack, then is accompanied by a slight acidity that enhances the aromas of a very ripe mango. Tastes include peach, flowers, lemon, apricot and banana. It's an ingredient that can easily be used in sweet-and-sour cuisine, both hot and cold.
