Description

Typical pasta of the Italian culinary tradition, Filotea egg fettuccine measures about 1 cm wide, is bronze-drawn, and produced according to a fully artisanal process. The egg pasta is made from a mixture of soft wheat flour, durum wheat semolina, and fresh eggs. Dried slowly at low temperatures, Filotea fettuccine is ash-free, light, and easily digestible. With a reduced cooking time of just 4 minutes, Filotea fettuccine is excellent to serve with meat and fish sauces. Their surface is rough and porous, which is why they have an extraordinary ability to hold sauces (unlike smooth ones).
